buffalo(bison) meat is leaner

buffalo.Its much bigger.& it eats more then a cow.

beef is much fatter

If you mean beef or buffalo...then its beef.
We don't eat cow....a cow gives us two things: milk and little cows.
The beef we eat is from steers.

Buffalo is lower in fat than beef.It is also more expensive and needs to be marinated because it can be dry.
