My mom made this chicken salad for my bridal shower a few years ago and put it on croissants. It was the best chicken salad I have ever had. Hope you enjoy it!



Chicken Salad

Original recipe yield: 10 servings


INGREDIENTS
2 1/2 cups diced and chilled, cooked chicken meat
1 cup chopped celery
1 cup sliced, seedless grapes
1/2 cup sliced almonds
2 tablespoons chopped fresh parsley
1 teaspoon salt
1 cup mayonnaise
1/4 cup heavy whipping cream

DIRECTIONS
In a medium bowl, whip cream to soft peaks.
Combine meat, celery, grapes, almonds, parsley, salt, and mayonnaise with whipped cream. Chill.

I really enjoy my moms pimento spread that she puts on sandwiches. She puts olives and pimentos, onion and mayo, puts it in the blender and YUMMMO!

I could eat it just with crackers.

For bread sandwiches, I love "american" cuban sandwiches which include, ham, salami, turkey, cheese, lettuce, tomato, pickles, mayo and mustard.

Desserts, I love chocolate peanut butter sandwich cookies...

Mayo, tomato, onion, and a pickle, loaded down with a good roast beef.

All homemade:

Condensed milk
Salt & vinegar potato chips
Sultanas

Not all together of course!

Peanut butter & whipped cream. You wouldn't think it at first, but it is an amazing combination :) I use redi-whip in the can, so it's not as thick.

nothing like bacon, lettuce, and tomato on toasted sourdough

Either A: Turkey, lettuce, mayo, sour cream and onion chips on white bread

or

B: Bacon, Lettuce, Turkey, Mayo

Not the best I have ever had, but different... tomato and american cheese.. trust me it's really good.. and don't knock it til ya try it!! lol.

On french bread: Roast beef, provalone cheese, lettuce, onion and avacodo...MMmmmm yummy. I know it sounds odd, but its wonderful and with the avacodo you don't have to use mayo (I'm not very fond of that stuff).
