I consider real cheese that which is made from milk and is made in a cheese factory. It is properly aged and does not contain any phosphate which affect the melt characteristics.
I guess others will have varying answers but this from a food scientists

It's personal taste.

My own personal view of real cheese is cheese made on small farms using milk from it's own herd and matured traditionally, just like they've done it for centuries.

Makes it taste much better than mass produced.
