Fast easy foods help!?!


Question: my bf and i work differnet shifts some times 10-12 hour days we never see each other let alone really have time to eat...what are some fast easy foods we can make that aren't to unhealthy for us

Try these yummy, healthy snacks!!!

~Apples and peanut butter
~grilled cheese sandwich with added tomatos
~veggie wrap
~english muffin mini pizza
~ celery with ranch dressing
~ grilled chicken or tuna sandwich with tomatos, lettuce and cucumbers
~ peanut butter and jelly sandwich with whole wheat bread
~ triscuits with cucumber and cheese slices
~trail mix- dried cereal( special k, cherrios, chex), m&m's, almonds, peanuts, dried fruit
~fruit salad
~ fruit and yogurt parfait- use strawberry yogurt to fill 1/3 of a tall glass, then add strawberries and blueberries then add more yogurt on top and then top with whipped cream and a cherry!!!

salmon and white rice,

salmon fillet.... mix some butter lemon juice and soy sauce put onto the salmon....... salmon is in tinfoil, put into oven on 350 degrees, for 30 minutes or until it flakes. rice takes 4 minutes in microwave, then top the rice with the salmon.

or anything on the grill, ribs marinate overnight and slap onto the grill.

make a large casserole. it generally cooks in the oven which gives you enough time to do other things.

It sounds like you two need to freeze some meals ahead and make life easier.

Lemon Chicken Casserole recipe
4 chicken breasts, cooked, chopped
1 (10 ounce) can cream of chicken soup
1 cup sour cream
1/2 cup lemon juice
1 sleeve round butter-flavored crackers, crushed
1/2 cup (1 stick) butter or margarine, melted
3 tablespoons poppy seeds

Sprinkle the chicken over the bottom of a greased 9 x 13-inch baking pan.

Combine soup, sour cream and lemon juice in a bowl; mix well. Pour over the chicken. Sprinkle the cracker crumbs over the layers. Drizzle butter over the cracker crumbs. Sprinkle the poppy seeds over the top. Bake at 350 degrees F for 30 to 45 minutes.

Makes 4 servings.

Baked Tilapia, if u have a george farmer grill, its better, steam broccoli and roasted red potatoes or garlic mashed potatoes, u can't go wrong with that, and some sparkling cider, a great meal

Make some of the food ahead of time. For example cut up celery, onions and other fruits and vegetable ahead of time - better yet, use a blender to puree or chop them, just get them small enough to fit. (But only make and chop as much as you will use, otherwise they'll spoil if left out too long.) Make sauces and broths before hand. Find different ways to cook things. For example: instead of baking or boiling potatoes, look online for how to cook them on the stove top for much longer. Find ways to do as much as you can before hand. I hope this gets you thinking... Raw food is also good for part of the meal (apples and caramel - ready to eat food, no heating required)

gourmet omeletts are always quick and easy. I call them gourmet to trick the kids into eating my wierd concoctions. You can put all kinds of meat, cheese and veggies in an omelette, use one whole egg and 2 white (or more) and the omelette is lowfat and super healthy, full of protein. We have them with whole wheat toast and juice for a well rounded, very quick meal.
