What exact part of the pig is the knuckle?!


Question: I know it sounds like a blonde joke- but is there any site that shows its exact location on the pig. I believe its above the trotter?

I am a former chef and correct it is almost always the hock portion of the rear leg, and somethime the front , but it is either fresh or smoked, I use the smoked for soups and making collard greens, the fresh can be roasted and braised with cabbage or in sauerkraut, even boiled and cooked with lima beans, this is a southern dish.

Here in Canada we have some pickled, and not just cured, smoked, then cooked and finally preserved in a spicy vinegar, like kolbassa and boiled eggs.

The knuckle is the knee, often refered to as ham hocks.

it is the part between the front foot and the body of the hog. They are normally sold smoked to be used as an additive to what you are cooking to add flavor. There is very little meat on them.
