I always put cucumbers in my salad as well

I would add some celery or cucumbers for some crunch. Other than that it sounds delicious!

give it some color... add some shredded carrot for taste and eye appeal

We have our salads like antipasto salad.

salad adds:

2 large red bell peppers, halved lengthwise, seeded
2 large yellow bell peppers, halved lengthwise, seeded
2 large orange bell peppers, halved lengthwise, seeded

6 ounces feta cheese, diced (about 1 1/2 cups), plus 2 ounces coarsely crumbled (about 1/2 cup)

Kalamata olives (optional)

1/2 lb small fresh morels (preferably 1 to 1 1/2 inches), trimmed, halved

10 ounces Black Forest ham, cut into matchstick-size strips
1 small garlic clove, minced

1 1/2 cups coarsely shredded peeled carrots
1 1/2 cups halved cherry tomatoes (about 10 ounces)
1 cup drained bottled peperoncini (5 oz)

1/2 pound thinly sliced prosciutto
2 8-ounce balls fresh water-packed mozzarella cheese, drained, thinly sliced into rounds

I would toss something crunchy into the mix. It makes me feel like the salad is more of a meal. How about some big homemade croutons (so easy to make) or pine nuts? Pine nuts have a distinctive yet fairly mellow flavor that would make the salad even more memorable.

I'd probably toss in some sun-dried tomatoes and some toasted nuts. Either pecans or pine nuts. But it already sounds yummy!
