In the South dirty rice is cooked with chicken livers and gizzards that are ground up and mixed in the meat with other seasonings like onions, shallots, etc.

Dirty rice is cooked with seasonings..... as compared to "clean rice" cooked with only butter and salt.

Dirty rice just has something in it, making it not "clean" white (or brown, depending on the rice). It has tomato products, spices, black beans, or something in it making it impure, adulterated rice.

Dirty rice is a Cajun dish. Not that it looks dirty or taste that way, it just has a lot of spices and stuff in it that make the name worthwhile.

dirty rice has little peice of meat and seasoning to give it a seasoned color.
