Initially, these stores were open from 7 a.m. to 11 p.m., hours unprecedented in their length, hence the name.

when 7-11 first started, it was open from 7 AM to 11 PM.
24-7 doesnt have as nicer ring as 7-11
They use to only be open from 7am till11pm and register name and trademarked it people got use to it so it stayed...
When 7-11 first opened in the 1970's they were open 7am -11pm.
Are they ALL open all night, these days? (I don't know, because it's been a few years since I've seen a 7-11 at all.)
If a convenience store gets robbed frequently, it usually happens at night. Other chains close robbery-prone stores at night in order to avoid having employees killed.
There aren't very many sales at 3 AM, and it's certainly not worth having an employee die for those few bucks of profit.

As said here a several times, they originally were open from 7am to 11pm.
Incidentally I'll add that NOT ALL stores are open 24hours (even thought MOST are) so even in today's times it would not apply if they called it something else.
When first it first opened its doors in the 1970's, they were litterally open 7am to 11pm, not 24 hours a day. Hence the name 7-11.
