Is it true when you are canning food...?!

Question: that it is all cooked in an oven at 400* for like 6 hours? Someone told me this, and I don't know if it is true or not, also is canned salmon raw, or "curred" and what is curred? The rivetts in cans...for expansion in the oven?

Not true at all! Although the foodstuffs are cooked in the sealed can,it is only done for a short length of time. Think of the can as a pressure cooker & you will then understand that only a short cooking time is needed. Canning is a method of preservation & if done correctly is very safe. as for the salmon-it will be cooked in the can. Curing is another form of preservation, using burnt wood smoke as the preserving agent. different type of wood give different flavours. Rivets in cans! not heard of them being used, sorry.

I don't know about salmon, I imagine it's cooked.

When you can food, (at least the home version of canning), you put your food in glass jars, put the seal and lid on and BOIL it until the air goes out and the heat creates a vacuum seal. It cooks for just a few minutes.
