Answers: If many cheeses that conatin mold like blue cheese are safe than is it safe to eat expired cheese wit mold on it ?
Just cut the mold off. You can still eat the cheese. Many delis and cheese shops will do this and repackage the cheese for resale. It's perfectly fine. Dipping your knife or cheese cutter in vinegar will retard the molding process.
Well a French coworker eats moldy cheese all the time and I'm not talking about blue cheese. He doesn't care if it's moldy cheddar cheese. He's still alive and doesn't seem to get sick from it.
I on the other hand avoid it.

If it's expired, I would avoid it, mold or not. Toss it. If it's not expired but has some mold on it, cut the moldy bit off. Hard cheeses such as cheddar are fine to eat if you cut the mold off the cheese first. The mold that makes cheese is of a certain variety; not all mold is created equal. Just because the mold in bleu cheese doesn't harm you doesn't mean that other molds are as benign. Black mold, for example, is a health hazard.
I shave the mold off and have never gotten ill but I wouldn't actually eat the mold.
Just cut the mold off of it and then eat it. It looks like that before you buy it in the store.

When Cheese is made , it is covered with mold to protect the cheese inside during the ageing process.
I dont eat the mold , but when i have a cheese get moldy in my fridge , I simply cut the mold off it and it is fine. In Europe, its done that way all the time in some of the finest kitchens.

if the cheese is a soft cheese and is moldy then toss it cause the spores travel down in the cheese if its a hard cheese go for it just cut off the mold.
I've had expired food a lot and have not been sick. But i wouldn't eat the mold. If it smells funny toss it.
