Eating any meat in moderation is ok, but if your diet is primarily based on hams, chops, bacon, hot dogs and pork pies, then you risk suffering a heart attack long before you die of cancer!
No it doesn't. Many many years ago and study was done on nitrites in cured meats which showed that if an excess of nitrite was present it COULD lead to the formation of nitrosoamines under certain circumstances. I suspect this is the study you are referring to. Anyway the meat processors like OM, Eckrich etc started adding ascorbic acid which prevents the formation of nitrosoamines. So the answer is no.
Furthermore you may ask why add nitrites. The answer is that they are the only proven way to insure against C. botulinum. This is an organism which produces a highly lethal toxin that you do not want to ingest.
