Sometimes the truly simple meals really are the best!

last eve I made butternut squash soup, first roasting the squash to bring out its flavour. For main course I used a Green's Restaurant recipe (vegi), which involved making a kind of fritter mixture with fresh spinach, goats cheese, ricotta cheese and whipped egg whites. plus seasoning and fresh herbs. Cooked them as you would for drop scones. Served main course with baby potatoes and sweetcorn (local produce) Preferred the soup, but ate both courses with a friend.. A good friend, who appreciates my cooking. It's always good to catch up with him.
Spicy chicken pasta. I wasn't in the mood to cook and I was feeling a bit tired and some friends just popped over. So I threw this dish together and it turned out to be really really tasty and oh so good so I will definitely be making it again
