Answers: And even though they're not as busy,

Back in the "old" days that was a common saying. But, now we have 7 day a week delivery of all items from meat to fish to bread to produce.
Also, with the advanced computer programs that we use to chart everything from customer counts to recipe planning, we generally don't have a lot lot of leftovers. At least not in my 3 restaurants.
That is what I have always been told.

Anyone caught serving "leftovers" in a restaurant, could loose their license....this is a health violation...
Having worked many years ago (in my youth) at restaurants...I can tell you I NEVER saw that happen...

I just have to add though...when I was in the high end furniture biz...we had a saying that you never wanted anything made on a Monday or a Friday...Monday's,everyone was hung-over...Fridays, people were in a rush to start their weekend...!

Any decent restaurant with a self-respecting head chef would never allow this to happen. The restaurants I have worked in are very good at gauging how much food they are going to need. Every head chef I have ever learned under taught me to play it safe and throw out (or eat yourself) any food that may have potentially gone bad.
I'd say that's more true for Sunday than Monday. When I worked in a restaurant, we'd run specials that lasted through Sunday, so if there was a "leftover" night, it would have been Sunday. Fresh shipments always came in on Monday morning.
not true at all. a lot of places get deliveries on mondays and you probably get left overs on sunday
No, i have worked at 3 restaurants and that isn't true at all for any of them!
