This is an easy recipe for turkey enchiladas...
Take this and get rid of the tortillas... Go ahead and boil your noodles to have ready. After serve the cheesy turkey mixture over the pasta. Presto!!

TURKEY ENCHILADA PASTA!!

1-2 cups left over turkey, cut into bite size pieces
1 - 8 oz cream cheese, regular or light
1-2 cups grated cheese, cheddar or jack
1 -12 or 16 oz jar of favorite Salsa
Diced Olives (opt)
med.- small size FLOUR Tortillas
diced onions

In skillet put in 2/3 jar of Salsa, cream cheese, cheese, melt together over med.-low heat, and add olives and turkey. Spray casserole dish with pam cooking spray, put 1/2 of left over salsa in bottom of dish. Fill flour tortillas with equal portions of turkey mix, fold in half then roll up. Place tortillas in dish, pour remaining salsa over the top of rolled tortillas.

Cook at 300°F with lid on until heated through. Top with grated cheese, diced olives and diced green onions, if you desire. Kids really like this, use a mild salsa. This can also be made Vegetarian, omit the turkey, use tofu or not. Not-Fat recipe, use non-fat cream cheese, 1/2 -2/3 cup of non-fat sour cream. Use less cheese (cheddar/jack) Non-fat cheese does not work in this recipe (doesn't melt). Left over chicken works well too!
