Just cut off the moldy parts. Cheese is supposed to mold - what do you think Stilton is?

most times the white residue on your cheese is not mold, especially if you have had it less than a week. I asked "Sam" (name of all the workers in the meat and deli department) at my local supermarket and I was told that it is solidified milk or oil (I forget which). I still get that same cheese, but often get the "other" cheese which is made from real milk rather than dry milk product.

Try not touching the cheese as you're cutting it. As soon as I started doing that, my cheddar never molds. Hold the cheese through a piece of plastic wrap, then once you're done, wrap it in plastic with no holes for air to get through.

If it goes moldy on you, cut the mold off. It's fine as long as it's a hard cheese.

cheese should not be molding up that quickly. i guess you need to wrap it better, but check the stats on your fridge. my fridge has a switch for the amount of humidity or moisture it has.
