I would go for devil's food cake but of the three that you mentioned I would go with red velvet peppermint cupcakes with topped mini candy canes or maybe you can crushed them and sprinkle them over the frosting.

Personally I love pumpkin, but that's more for Thanksgiving. What is in the peppermint one? Chocolate or what? Other thatn peppermint of course, lol.

Chocolate with a middle layer of either peppermint or lemon moose, then a top chocolate cake layer then chocolate pudding as a frosting.

red velvet peppermint is a very Christmas-y cake. But in my family we always make Yule Log Cakes....

Red Velvet Peppermint the other two are wonderful for Thanksgiving but would confuse your guests on Christmas. But also have you thought of a spice cake. Wonderful with cidar at desert.
