What's the difference between individually wrapped slices of cheese and cheese you get from the Deli?!
The individually wrapped slices, like Velveeta and Kraft singles, aren't pure cheese. They're processed cheese food, made from regular cheese and sometimes other unfermented dairy ingredients, plus emulsifiers, extra salt, food colorings and/or whey.
Kraft calls their Kraft singles ""American Pasteurized Prepared Cheese Product".
And their Velveeta contains: MILK, WATER, MILKFAT, WHEY, WHEY PROTEIN CONCENTRATE, SODIUM PHOSPHATE, MILK PROTEIN CONCENTRATE, ALGINATE, SODIUM CITRATE, APOCAROTENAL (COLOR), ANNATTO (COLOR), ENZYMES, CHEESE CULTURE.

I'm no expert, I'm merely guessing...
I'm pretty sure that the individual wrapped cheese that you would get in the dairy section has preservatives in it to make it last longer. The deli stuff is fresher, no preservatives, and likely better for you...

The first one is yellow-colored processed plastic that they call cheese.
