Yes, you can eat too many carrots. But, you would have to eat a lot. You can get a condition where your skin actually turns a shade of orange. I used to work with a person who was an anorexic when she was in college and that was all she would eat. She said that her skin turned a shade of orange and I started to laugh. That was when I realized that she wasn't laughing and was serious. Look at the link I found about it:

When I was on a diet yrs. ago I was eating up to about a pound of carrots or more a day and my skin began to turn yellow/orange. I thought I had jaundice at first but when I went to the doctor it turned out I was overdosing on beta carotene from the carrots. The vitamin A was accumulating in my fat/skin and giving me my orange color.

I stopped eating carrots immediately and it took about 2 months for it to disappear.

You would get 'carotinamemia" , a tempoary yellowing of the skin due to excessive carotene in the diet.
It is commonly seen in infants fed with carrots, papaya,etc. But could occur in adults too.

Skin would turn into a yellow-orange shade, due to the deposition of the pigment 'carotene' found in carrots & other yellow fruits & vegetables.
It needs could be differentiated from jaundice by looking at the sclera of the eye, which turns yellow in jaundice & not in carotinaemia.
