My favorite is as part of what I call a skillet meal. I first fry up some bulk breakfast sausage and crumble it up and set it aside to drain. Next, I fry Potatoes O’Brien (diced or shredded potatoes with onion and green pepper) so that the potatoes are crisp. Finally, I scramble the eggs. The sausage, Potatoes O’Brien and eggs are then tossed together with cheddar cheese and I serve this with hot sauce. Absolutely delicious!
