Bison is wonderful. I grew up on it and personally the taste is much better that greasy cow meat.
Ground Bison can be used for burgers, meatloaf, chili, spaghetti, meatballs.
I do recommend trying Bison roast or stew meat. The flavor is richer than beef and the meat is much healthier than anything from a cow.

If it's ground, you'll be hard pressed to distinguish it from lean ground beef. The flavor is not all that different from beef; it's not gamey at all. The texture is a little tougher, but that won't matter if it's ground.

When cooking it, you might cook it a little less long than you would beef. Because of the lower fat content, it cooks a little quicker. Other than that, you can treat it just like beef.

It is some of the best meat I have ever tasted. I have only prepared bison burgers but have had steaks when I eat out.

It is very lean, but very tender.

If you use ground meat, cook it normally. If you pick cuts of meats, esp. thicker cuts, lower temps and longer cooking time are required.
