Bought fresh mexican restaurant salsa 8 days ago, is it safe to eat now?!
It appears fine, no early mold spores and the texture seems the same as well. I just have a horrid fear of spoiled food taste in my mouth... you know, that "first sip of the milk that expired two days ago" fear.

Answers: I purchased it on the 6th, 8 days ago... they seem to make it fresh every day, it's super duper hot with bits of onion, garlic and cilantro in it. I'm craving the rest of it, but I'm not sure if it's still safe to eat... any ideas?

you're fine. salsa last but I would say eat it up today and tomorrow.
Actually salsa is made of tomato, garlic and hot peppers that have been boiled and then blended together and onion and cilantro cut up fresh and added. Salsa actually taste better in the days after being made since all those flavors start to fuse together. A lot of Mexican food is like that, taste better the 2nd or 3rd day.
It probably doesn't have preservatives.
Three days in the fridge is the max.

It should be fine, probably not as good tasting and the tomato will probably be mushy but as far as safety, your safe.
When in doubt, throw it out!
While usually salsa can last a long time, I would not test this one. I work in a restaurant, and we make our own salsa. If we do not use it three days after it is made, it gets thrown out. 8 seems to me like you are pushing it.
The problem with Fresh salsa is that it does not have the preservatives that you find in store bought salsas. While it probably contains salt, it is not in amounts to really protect the product. Same with the natural acids.
I am actually surprised that the restaurant sells this for home consumption. We don't because of the fact that if people don't eat it fast enough it can go bad, and we could be held liable.
