Everything ages. Even eggs.

The shells are porous so water evaporates from the inside.

The same reason that dead bodies still decompose when they are chilled. Refrigeration simply slows down the decomposition process.

ummm...I don't exactly know the science of it. But bacteria grow and everything gets old- even you would in a refrigerator, lol.

I buy the freerange from on the side of the road, I can see the hens running around there (not on the road I might add) and have eaten the eggs weeks after I bought them after keeping them in my fridge, bright orange yolks, yum! No problems, do the water test if they float at all don't touch.
Hairy eggs are just wrong, lol.

the fridge was designed to "slow down" the bacterial process....not to terminate it overall. the eggs ages and rotts because its in the fridge to long, like it or not the bacterial process is always going to happen.
