Leftover Prime Rib?!
Answers: I want to fix a Prime Rib Roast but there is only me and I obviously will not eat the whole thing. So do you have some ideas for leftovers?
You can use prime rib for sandwiches, but I love to use prime rib in roast beef hash. Cut up at least a cup of roast beef into 1/4 inch cubes. They don't have to be square, but they should be approximately all the same size. Cut up the same amount of cooked potatoes. You can use boiled or baked potatoes. They should be the same size pieces as the beef. Cut up about half the amount of onion. Put a small amount of oil in the bottom of a frying pan, heat the oil to medium and add your potatoes and beef. DO NOT stir it around too much. You want them to get a crunchy crust. When there is a crust on one side, add the onions, and turn everything over to get a crust on another side. Make sure the heat is not too high or the onions will burn. When it is crispy enough for you, eat and enjoy. If your prime rib was well seasoned you may not need any other seasonings except salt and pepper, but you can add thyme, garlic, or just parsley with the onions.
yes,I would slice it and buy some wonderful fresh bread from paneras or fresh market and make some nice brown gravy and pour over the meat and lay on the bread i would leave it open faced and pour gravy completely over the whole thing!!

Ok for a little less fattening you could also warm it up and make a nice salad by slicing it over then slicing some boiled eggs and celery and tomato throw it all together..
you kinda need crinkled up blue cheese over it for that..hubby hates blue cheese but i love it.
Cold steak with horse-radish sauce. French dip sandwich. Any thing you would be with leftover steak. Prime rib roast is just ribeye steak that is not cut into steaks. You only need a 2-ribber. Enjoy!
