Salmon was considered low end until the fish stalks of many types of fish were depleted. Now all fish is expensive and it doesn't really matter what it is.

Pork also was taboo in the slave days and the slaves became experts at barbecuing ribs.

Ok. I am not really sure how to answer this question....but Chitterlings (gross to me) are considered a delicacy to many blacks and were once considered garbage. I personally would still consider them garbage, but to each his/her own.
