It's safe to reheat it, as long as it's only been a day or two & it's been kept refrigerated (of course! lol!). If the cut is thick enough (an inch or more) I just heat a heavy skillet up and sear it on both sides (few minutes each side). Just don't microwave it - ugh! You can also do it in a low (200) oven if you have some time on your hands (this usually takes about 30 minutes or so). Just be careful - you only want to heat it, not cook it a lot more!

I would heat it in a covered pan with a little stock or au jus. Keep the light on low. You don't want to cook it anymore, just heat it in a moist pan!

Of course it is safe, but there are certain methods you must employ to make sure you don't dry it out during re-heat. If what you have as leftover is still in loin form (more than a pound or more) you want to re-heat gradually, otherwise you will dry out the exterior of the meat, before the inside gets warm. Would also suggest tenting with foil, and putting a little AuJus or beef juices and water in bottom of pan. If what you have is already sliced left over prime rib, just simmer some AuJus, and lay prime rib in Aujus to re-heat, will keep it nice and moist.
