Whole milk is not diluted with water. 1% and 2% milks are diluted with water, which dilutes the vitamins also. Yes whole milk has more protein and calcium that is not diluted.
Whole milk has a thicker, fuller, creamier taste. 2% slightly less so. Skim is much thinner and doesn't leave a fatty aftertaste in your mouth (or residue on your glass). I prefer skim, myself, taste-wise. If you're looking for milk with a lot of proteing and calcium try soy milk.

Whole milk contains up to 28 percent fat
Whole milk contains 4-5% fat and has the cream homogenized into it. In lower % fat (2%, 1% and 0% - aka Skim) milk, some or all of the cream has been skimmed off before homogenizing. Taking some of the cream out does not affect the protein or calcium content of the remaining milk, though as a percentage of the total that's left, it may appear to have more.
Sometimes manufacturers will further fortify the milk with extra protein (leftover from processing cheese which has had the liquid whey drained out), though they will label this prominently on the carton or cap to let you know you're getting "extra".

Whole milk contains the most fat. I've gotten used to skim milk and it's good for the complexion. Drink it, don't put it on your face. Ha, ha!
