In my country, you can find a cheap and healthy food in some small stalls here. such as: yellow rice, rice with shredded chicken etc. and they're all yummy!
Rice is good. Liven it up with some peas or sweetcorn.

Store brand canned veggies or frozen, instead of fresh. Pasta, rice, dried beans instead of canned, ground beef can be cheap if you buy 70/30 and are willing to drain it. Potatoes, white onions, jarred garlic, cilantro. And some markets give away parsley free. And any veggie or fruit that's in season.
