What are fingerling potatoes? Why fingerling???!

They are an heirloom potato type developed in Europe. They come in a variety of colors from white to yellow to blue. Well grown they do indeed look like fingers. They are more oblong and skinny compared to a baker or new potato

Most are salad taters-their flesh tends to be hard and waxy making them perfect for boiling or roasting but awful for mashing. They are also excellent made into home fries.

If well grown and fresh they are the best taters I have ever had. If bought at the grocery they will not be as good and they might have already greened up. At least this is what I see at my local grocery that has recently started offering fingerling taters

Fingerling potatoes are long, skinny, and small. They do pretty much look like a potato monster's fingers. At this time of year they are easy to find, and come as a variety (white, rose, and brown all the the same bag). They are supposed to be a delicacy, but I think they are overrated.
