I just ate a 4 year old Summer Sausage from Hickory Farms?!
Answers: It was vacuum sealed. I only swallowed one bite, then I realized the used by date. It was rather mushy, but didn't smell too bad. Do ya think I'll live?
I'm sure you will be fine. One bite probably won't hurt ya with the exception of a small upset stomach and a tad bit of diarhea (worse case scenario). If it is any help, those summer sausages have so much preservatives in it, it probably wasn't even bad.. LOL.
I'm just curious how you managed to get such a fresh one.

I would guess you will live but may experience a bit of intestinal discomfort if it was indeed bad. I had a client that bought a sausage roll from my son's school fundraiser once and when she opened it, it was rancid. So, I am assuming that if it didn't smell rotten, hopefully you'll be just fine.
