BEEF OR CHICKEN ENCHILADA CASSEROLE

2 lbs. hamburger or 5 deboned, skinless chicken breasts, boiled & drained
1 can enchilada sauce
1 can cream of mushroom soup
1 can cream of chicken soup
1 doz. corn tortillas
1 can chopped olives (or more)
1 onion, chopped fine
Big bunches grated cheese
1 can diced green chili (sm. or lg. to taste)
Salt, pepper & garlic to taste

Saute meat mix with enchilada sauce, soups, onion, chili, olives, garlic, salt and pepper; mix well. Layer sauce with tortillas and cheese leaving off last layer of cheese. Put cheese on top the last 5 minutes or baking. Cover and bake 45 minutes in 350 degree oven.

I have been asked over and over again for my spaghetti sauce recipe. Here it is.

Dean’s Spaghetti Sauce

2 - 28 ounce cans tomato puree
2 - 18 ounce cans tomato paste
32 ounces water (approximately, add more or less to your thickness preference)
2 tbls minced garlic
2-3 bay leaves
1 tbls dried basil
1 tbls dried parsley
1 tbls dried oregano
? tsp dried thyme
? tsp dried sage

Mix all ingredients in a 5 quart Dutch oven; bring to a boil, stirring constantly. Reduce heat, cover and simmer over very low heat several hours for flavors to meld, stirring occasionally. Do not let it boil too rapidly. Since tomato products seem to vary in sweetness, a couple teaspoons of sugar can be added if a little extra sweetness is desired.

Tripe and Onions.
1lb Tripe.
2 Medium Leeks
2 Large onions chopped.
Potatoes.
Parsley sauce.
Boil the tripe for 15 minutes and drain.
Cut into bite sized pieces.
Return to pot with more water bring to the boil as simmer for 30 minutes.
Add onions when water boils and stir.
Use some flour to thicken, and add fresh or dried parsley.
Steam the leeks over the potatoes as they boil
Mash potatoes to a drish mix so that it will mop up the sauce.
Serve potatoes and leeks.
Serve the tripe and onions and pour over the sauce.
