I'm a big fan of using soy milk on my cereal. I like vanilla, but not too sweet. My wife loves chocolate soy milk and drinks it most mornings.

Soy milk generally has a longer shelf life (2 months), but once it's opened you need to finish it off in about a week. I usually purchase several quarts of soy milk at a time. It takes me about a week to polish off a quart and I always have a back-up ready.

With milk, you can generally find containers marked with expiration dates 2-weeks into the future, but once that date hits, you are taking your chances.

Note that the above assumes refrigerated products, you can purchase milk and soy milk in unrefrigerated boxes, but I have never done so. I'd imagine the shelf-life of those is quite a bit longer than the refrigerated products.

The shelf life of milk is affected by several factors including how the product was handled before it reaches the consumer. When stored at 40 degrees Fahrenheit and not left unrefrigerated for extended periods, it should last approximately 7 days past the sell-by date on the container. For soy milk it should last approximately 10 days past the sell-by date.

But personally I drink milk by the best-before date

And soy milk is healthier so that's a bonus
