Chocolate has two parts cocoa butter and the bean pod the brown is the bean pod and the butter is the white.

It is the concentration of the chocolate and the coloring and as the person above me said the butter.

Its the fatty part. The cocoa butter. The cocoa bean has different parts used to make the chocolate and white chocolate. White chocolate isn't really chocolate though.
