The small pores in the ice cause the CO2 to escape. It is called "Nucleation" See the following link

http://en.wikipedia.org/wiki/Nucleation

To stop it, add the ice to a glass of coke.

For fun, add mint mentos to a 2-liter bottle of coke.

melt the ice lol

to combat the amount of foam try pouring slower, down the side of the glass at an angle.

A tiny pinch of salt knocks the foam down. It may affect the taste if you use too much.

tilt the glass a little and pour it in slow at the side of the glass hardly any foam that way and did you know when you pour it the way you are talking about if it starts to overflow put your finger in the middle of the foam and it won't overflow both of them really work

Don't pour it over the ice, pour it down the inside of the glass.

try slighty tilting the glass(cup) when u pour the coke inside

My dad always stuck his finger in the glass while pouring Coke, it works...but ewwwwww!!!

The warmer the carbonated liquid poured over ice, the more it fizzes. If you keep the Coke in the fridge, it shouldn't fizz much, but then you might not need ice anyway.
