Someone who watched calves feeding from their mother and related it to a human baby feeding from its own mother. They theorised that the milk may be the same and then tested it out.
Since mammals nurse their young, and one can see the calves nursing, it's not such a big stretch to consider it drinkable.

I can answer why Yankee Doodle called his feather macaroni. In the late 18th century there were a group of dandies that called themselves the Macaroni club. They were quite flamboyant and used to wear such things as feathers. Yankoo Doodle is therefore making an allusion to being a member of this club when he puts a feather in his hat.

I guess if early man kept cattle for meat, and a cow had calved but the calf had died, the cow would be in some discomfort...
Men would know that babies drank mothers milk.... so they might have milked the cow to save its discomfort, or to feed to a hungry baby...?

Man is the only creature that continues to drink milk after weaned......Cats we give them milk but its not good for them. Most likely cows were used to replace mothers milk in orphaned babies, way way back, and it just became a feature.

The use of milk as food is as old as recorded history. It was probably a simple leap from watching a baby nurse to trying to see what the baby was drinking.
