Evaporated milk?!
Answers: someone gave me a can of evaporated milk...how do I use this? do i need to dilute it? what's going on with this can of mystery
Evaporated milk? is 60% of milk's liquid is evaporated so its very concrentrated and very powerful and thick. Its good for milkshakes, and good for cakes.
It's great as a coffee whitener, as a sub for milk or cream in quiche, muffins, pancakes, pies, etc. It adds richness w/o extra fat like cream or half and half.
Best Ever Cornbread
1 cup yellow cornmeal
? cup A/P flour
1 tsp. salt
1 tsp. baking powder
? tsp. baking soda
1 cup buttermilk
? cup evaporated milk
? stick of butter, melted
1 egg
Preheat oven to 450oF. Grease a 9" cast iron skillet and warm it in the oven during preheat.
Whisk all dry ingredients together in large bowl. Whisk all wet ingredients together, then add to dry ingredients. Pour into skillet, and bake for 15 minutes. Yield: 4-6 servings

Some recipes call for evaporated milk and you can also use it as creamer in your coffee.
keep it for when you run out of normal milk :)
don't dilute it just put about 2 tablespoons of it into coffee, delicious!
..you can also use it in pancakes and pies, just don't put too much in- it's quite rich and sweet

I hate evaporated milk. I think it tastes awful. If you are going to use it, use it in cooking so the taste is hidden.
it is not to be drank but you can use it in recipes or coffee....VERY concentrated.

No, you don't need to dilute it but you can if you want to. It doesn't quite taste the same as regular milk when you dilute it back, something in the evaporation process changes the flavor, makes it kinda sweeter. It's used as an ingredient in many recipes, but I wouldn't recommend drinking it straight, it has an oddly sweet flavor.
I think the original idea behind evaporated milk was actually to preserve it, you can keep it on the shelf unrefrigerated for a while without spoiling. This was a great thing before electric refrigeration came along, but now you can keep regular milk in the fridge for a week or two so it's lost its popularity, except for those recipes that just don't taste the same without it, like povitica bread.
