Ingredients
1/2 cup carrot juice
1 lb/450g tomatoes, skinned, seeded and roughly chopped
1 tbsp lemon juice
4 celery stalks, trimmed and sliced
4 scallions, trimmed and roughly chopped
1/2 cup roughly chopped fresh parsley
1 well-packed cup fresh mint
Directions
Put the carrot juice, tomatoes, and lemon juice into a blender and process gently until combined.
Add the sliced celery along with the scallions, parsley, and mint and process until smooth.
Pour the mixture into tall glasses.
Serve at once and enjoy!

I usually turn mine into on-the-go soups. I put whatever vegetables I feel like eating into the food processor until they reach a nice pate, then I add tomato sauce or some vegetable stock until it makes a soup. Then I pop it into the microwave, put it into a travel mug....

it's a great way to get your vegetable servings in everyday....

I find that its much more tasty to add veg juice to a fruit smoothie. You can juice steamed broccoli, fresh carrots, etc then use them as a base for a strong tasting fruit smoothie.

Good vegetable smoothies is an oxymoron

if you put the same amount of veggies and fruits, the friuts overpower the veggies...soo u wont taste the veggies much
