I use to sell espresso machines and I worked for Starbucks.
You need finely ground espresso coffee, pack it into the portafilter tightly. Open water reservoir and add water (should have a fill line on glass pot), making sure to screw the lid back on tightly when done. Place espresso carafe or demi-tasse cup under the spout of the machine. Turn the switch to brew. Make a shot of espresso equaling between 1 and 1 1/2 oz.. Depending on the model of espresso machine you have, you may need to time your pull or the machine may simply have a set brewing cycle time (ideal brew is 20 seconds).

For Lattes: Add milk (10 oz. ) to a metal cup for steaming. Point your steam wand towards the bottom of your stainless steel pitcher to steam your milk. To create froth, raise the tip just below the surface of the pitcher once the milk is hot. Pour hot milk in a 12-oz. glass until 3/4 full. Pour the espresso shot into the steamed milk. If you like flavoring add to to glass before pouring milk.

You'll need a pump driven machine to insure enough steam to steam milk. Heat your latte milk in the microwave. You can purchase a steam wand that inserts into the end of your tea kettle to steam milk for capuccino
