Question: i got alot of oranges and i need ideas and recipes for them.i made a fresh batch of orange juice, but i dont want it to be just oj.if you have any other ideas for oranges, thanks. happy chineese new year!

Arugula-Orange Salad with Pomegranate-White Wine Vinaigrette

Perfect for holiday entertaining, this salad features the traditional colors of Christmas. It also allows you to make good use of your fancy vinegars. Champagne vinegar, fruit-flavored vinegar or white wine vinegar will work with the sweet and tart taste of the pomegranate and oranges.

For the vinaigrette:
1 pomegranate
1/3 cup extra-virgin olive oil
2 Tbs. white wine vinegar or raspberry vinegar
1 tsp. sugar
1/2 tsp. salt
Freshly ground pepper, to taste

For the salad:
2 large navel oranges
3 bunches arugula, tough stems removed
1 small red onion, sliced crosswise into thin rings

To make the vinaigrette, carefully remove the skin from the pomegranate. Working over a sieve placed over a bowl to catch the juices, peel away the thick membrane from the pomegranate seeds and allow the loosened seeds to collect in the sieve. Measure 1/3 cup of the seeds and reserve for garnish. Press on the remaining seeds with the back of a spoon to release about 2 Tbsp. juice. Discard the crushed seeds.

Add the olive oil, vinegar, sugar, salt and pepper to the pomegranate juice. Whisk until blended.

Using a small, sharp knife, cut a slice off the top and bottom of each orange to expose the flesh. Place each orange upright on a cutting board and thickly slice off the peel in strips, following the contour of the orange to expose the flesh. Holding the orange over a large bowl, cut along either side of each section, letting the section drop into the bowl. Add the arugula and red onion, separating the onion slices into rings. Drizzle the dressing over the salad, then toss to coat evenly.

Divide the salad among individual plates, distributing the orange sections evenly. Garnish with the reserved pomegranate seeds. Serve immediately. Serves 6.

Almond-Orange Salad

3 heads romaine, washed, cleaned, veins removed, chopped
? cup slivered almonds, lightly toasted
2 oranges, sectioned, reserve juice

Dressing:
? cup mild vegetable oil
1/3 cup cider vinegar
? tsp. Dijon mustard
3/4 tsp. kosher salt, or to taste
? tsp. black pepper, or to taste
? tsp. almond extract
Reserved orange juice from sectioning oranges

In large bowl, toss together lettuce and oranges. Mix dressing in jar by shaking, or in measuring cup with whisk. Dress salad greens/oranges and toss. Sprinkle on slivered almonds, toss again lightly. Serve immediately.

Rice Pudding with Vanilla Bean, Orange and Rum

5 cups whole milk
2/3 cup Arborio rice or other short-grain white rice
1 vanilla bean, split lengthwise
1/2 cup sugar
2 teaspoons dark rum
1 teaspoon grated orange peel
Orange segments

Combine the milk and rice in a heavy medium saucepan. Scrape in the seeds from the vanilla bean; add the bean. Bring the milk to a boil. Reduce the heat to medium and simmer until the rice is tender, stirring frequently, about 25 minutes. Mix in the sugar, rum, and orange peel. Discard the vanilla bean. Cook until the mixture thickens, 5 to10 minutes longer.
Spoon the rice pudding into bowls. Cover and refrigerate until cold, about 5 hours. Serve with orange segments.

Orange Cream Cheese Pie

2 (11 or 15 oz.) cans mandarin oranges, well drained, or 3 cups fresh orange sections
1 (8 oz.) pkg. cream cheese, softened
2 cups thawed Cool Whip
1/4 cup orange marmalade
1 graham cracker pie crust

Line the bottom of the crust with a single layer of Mandarin Oranges saving remainder for the top. Blend cream cheese and marmalade together. Fold in cool whip and spoon into crust. Top with remaining mandarin oranges and refrigerate. Chill at least 2 hours or overnight. Top with additional Cool Whip if desired.
