The typical method used to decaffeinate a coffee uses a chemical called methylene chloride which is toxic and a known carcinogen. However no fear. Chemicals of this nature tend to evaporate almost immediately. Additionally, the roasting process will boil off any of the chemical that might have remained.
If the idea of chemicals in your coffee bothers you, you should look for decaffeinated coffees that used the swiss water method. They are typically more expensive, but the caffeine was removed naturally with water and screens. Decaf coffees that have been processed this way will typically label ther bags as "Swiss Water Method."

You're crazy. Why drink coffee if there's no caffeine? You might as well have warm milk or water.

The previous person was right about methylene chloride being used, but that chemical doesn't seem to be used as much as ethyl acetate. As ethyl acetate occurs naturally in fruits and vegetables, companies can say their coffee has been decaffeinated naturally ... although quite often it is synthetically produced. I think the safest process is what is known as the Swiss Water Process. I am still trying to find an instant decaffeinated coffee (which is available in the US) that uses this process.

Check with the producer/manufacturer to find out which process they use and then make your decision on which you buy.
