You've answered your own question. It SHOULD be refrigerated after opening and this is for food safety reasons. You don't want to make yourself sick. I'd just dump it out and buy a smaller one next time so it can fit in the fridge. It's not a bargain if you're dumping lots of it.

you really need to refrigerate after opening. mold can build up on the tea.
I did it once and the tea tasted a bit off. It had an aftertaste.
No, it has to be refrigerated otherwise it will ferment. Meaning mold and other organisms will grow on it. I would suggest don't drink it. Dump it out.
