What is missing from soya milk to make less white than pasteurised cows milk?!

Could it be the sugar content of milk. Seeing as cows eat grass, it contains a sugar called Lactose. Lactose is not present in soy milk.

Edit: However it would seem that Casein which is rich in calcium and the fat content of milk is what makes milk white. The particles in the milk reflect light and therefore the milk is white. Maybe lactose is not the answer after all.

Calcium

Cows milk is naturally white.
Soya milk is from soybeans, which are off color yellow/brown.
I don't know of any white food coloring, many other colors though .

There is no similarity between soya milk and cows milk. Soya milk is produced from a bean using a highly inustrialised process, milk comes from cows.

its just the product -thats like saying what is missing from this carrot as its a different colour to this cabbage!
