According to Starbucks (and most smaller coffee shops and stands), a cappuccino is espresso with half steamed milk and half foam, while a latte is espresso with steamed milk and just a little foam on top. A mocha would basically be a latte with chocolate and whipped cream replacing the foam. A macchiato is an upside down latte, so it separates into layers, rather than all mixing together. The milk goes in first and the espresso would be poured over it and a dollop of foam tops the whole thing off. A frappuccino is stuff (coffee, chocolate, cream) blended with ice. So, by virtue of these definitions, a frappuccino is always cold, a cappuccino is always hot (because how gross would a cup of foam over ice be?), and a mocha and latte could be hot or cold. A macchiato should be hot, but Starbucks bends the rules and does it iced as well. Hope that clears the matter up for you.
