Since the dawn of consciousness, mankind have known that females (of many species, particularly humans) produce nutritious milk. Way back in pre-history, early cattle were undoubtedly captured and used as beasts of burden, perhaps while they were being held for later slaughter when food supplies ran short and hunters came home unsuccessful. With the captive females nursing their young, it did not take much reasoning for some proto-human to decide also to try the milk, and dairying was thus born.

Who can say what they were really doing? Quite possibly, one of the first reasons to milk a primitive cow was to replace the milk of a tribal woman who had died or been killed or stolen, so as to keep her semi-orphaned baby and toddlers alive; or to supplement the milk of a woman whose production was inadequate for her baby.

Milking a cow for one's own consumption probably was not the motive. Humans are unique, in that they are the only species to drink milk into adulthood. Even so, many adult humans cannot drink milk, because they have lost the enzyme needed to digest milk (lactase). Lactase production in humans dies out in early childhood, unless maintained by steady use of milk in the diet. So early man would have no taste for nor ability to utilize cow's milk. It must have been harvested as an alternate or supplemental milk source for their children -- and for that reason, probably the first milkers were women.
