INGREDIENTS
500ml Flour
80g Butter
15ml Baking powder
1 Egg plus water to make 175ml
METHOD
1!. Sift the dry ingredients together then rub in the butter until the mixture resembles fine breadcrumbs!.
2!. Make a well in the center and pour in the egg mixture using a scraper to mix!. Take care not to over work the mixture, 6 or 7 motions should be sufficient!.
3!. Cut out and place onto a prepared baking tray relatively close together so they can support one another as they rise!. Brush with egg mixture!.
4!. Bake at 200’C for 12 – 15 minutes!.
They rise nicely if they're placed prettu close to each other so they can support each other as they rise!. After about 10 minutes you can seperate them and then pop them back into the oven!.
You have to be really light with your fingers to make them work perfectly!.
