What causes my espresso to be overly bitter sometimes?!

Question: What causes my espresso to be overly bitter sometimes!?
Answers:
Using the wrong water to coffee ratio can cause this (typically, using too little water, or too much coffee), packing the coffee too tightly for the steam to push through can also cause this, as can a dirty coffee maker (make sure that the filter basket is not clogged with dirt and residue)!. Your tongue!. --- just kidding -- smiles

edit: actually, what you have eaten or drank prior to drinking coffee, or even how you slept affects your taste buds!.Www@FoodAQ@Com

It could be that the water you're using is too hot and you're burning the coffee!.Www@FoodAQ@Com

too much coffee being used and/or coffee too finely groundWww@FoodAQ@Com
