Next time, soek them overnight in plenty of cold water to cover them well, but add a teaspoon of baking soda(bicarbonate of soda; the raising agent, not washing soda) to every pound, then rinse and cook in frash cold water the following day, and as the previous chap said, no salt until cooked and tender, so no salty stock cubes etc!., either!. Ithe meantime simmer them longer and have a glass or two!Www@FoodAQ@Com
