Uht is a type of cow from Mars!. Seriously, though, UHT just means Ultra Heat Treated - cows milk gets heated ultra high (as name suggests) and this process means the milk can be kept, unopened, out of refrigeration for quite a long time!. Once the carton has been opened, it should be treated as fresh and stored in a refigerator for about 3 days!.
People often keep a carton or two as emergency milk, and since it can be kept out a fridge, it is used commonly in cafes in those little cartons!.
You are right when you say about the taste, though!. It does have a strange flavour!. It is fine in coffee or tea, but used cold in cereal or a drink - well, not quite the same as normal milk!. I used to use this milk a lot when I stayed in the middle of nowhere - you couldn't just pop to the shops for milk there!. Needless to say, I kept my intake of cornflakes to the rare occasion when I managed to get proper milk!Www@FoodAQ@Com

It does indeed come from a special fat free cow, once the cow is milked it is delivered by courier in less than an Hour (Under an Hour Treatment) so the tase you experienced is freshness!.
