Not all coffee has to be hot..this is such thing as iced coffee, or Frape, etc. But seriously, it's because you sue hot water, or milk do you not to make coffee?
Coffee is hot because you make it using hot water.

Same reason why tea is hot - you make it using hot (or boiling) water.
