Why is my Mate bitter?!


Question: Why is my Mate bitter?
Every time I make Mate, the first cup or two (gourd-ful) is really bitter. Even with sugar I have to suffer through it. But after the first cup or so is great.

I think some of the ground beans get mixed in at first, then they clear out.
