Half & half is half heavy cream and half milk. It doesn't whip.



Half and half was created as a mixture of half whipping cream and half skim milk (hence the name).

It isn't made that way anymore, and it's milk fat is now 10% whereas if it were really half heavy cream and half skim milk it's fat content would be 17.5%.

Heavy cream is much easier to cook with because it does not separate or curdle when brought to a boil like half and half and milk do.



That means half cream, half milk. Whipping cream is all cream, plus some stabilizers.
